Their menus are designed around the seasons and the produce of local growers, adopting a hyper-seasonal approach with menu changes every six weeks to keep it fresh and seasonal. In 2022, they were awarded their first Sydney Morning Herald Good Food Guide Hat, and have successfully retained it in 2023 and 2024. The Flotilla is open for dinner from Thursday to Saturday, 5:30 pm to 8:30 pm, and for lunch from Friday to Sunday, 12:00 pm to 1:30 pm.
