That Spirited Lot Distillers is a boutique family-run distillery in Seaford, Victoria, founded by brothers Jon-Paul and Chris Willigenburg, along with sisters Sarah and Kate Barton. Established in 2016, they specialize in high-quality pot and column distilled gins and vodkas crafted from Australian grape spirit, with a developing whiskey program. Their first product, Ninch Dry Gin, launched in May 2019, pays homage to the Mornington Peninsula where they grew up. The distillery emphasizes environmental sustainability, operating on solar power and repurposing organic waste into mixer and tonic syrups. Visitors can enjoy guided tastings, creative cocktails, and house-made sodas in a welcoming atmosphere. Private tasting sessions and functions are available by appointment.
