Sushi Room offers a refined Japanese dining experience within The Calile Hotel's ground level. The minimalist design features a 9.3-meter Hinoki timber sushi bar, complemented by stone and timber elements. The menu, crafted by Head Chef Shimpei Raikuni, emphasizes seasonal Australian seafood, including caviar Toro Toro sushi rolls and tempura lobster. Guests can enjoy à la carte options, set menus, or the premium omakase experience. The beverage selection includes sake, Japanese whisky, and international wines. Lunch is served on Fridays and Saturdays from 12pm to 2:30pm; dinner from Tuesday to Saturday, 5:30pm until late. Reservations are recommended, though walk-ins are welcome.
