The venue features a sunny yellow-hued dining room with floor-to-ceiling windows, a marble-clad bar, and Italian-sourced furniture, creating a coastal Mediterranean atmosphere. The menu, crafted by Head Chef Sam McCallum, celebrates Australian seafood and seasonal produce with Mediterranean and Middle Eastern flavors. Signature dishes include Pacific Oysters with Ajo Blanco, Clarence River baby octopus and Skull Island tiger prawns skewers, and Jack's Creek Angus bone-in Wagyu striploin with butter-poached lobster tail. Guests can enjoy a selection of summer-inspired cocktails named after local luxury yachts, such as Champagne Charlie and Rum Runner. The venue also offers a takeaway kiosk serving coffee and pastries from Seaforth’s Staple Bakery. St Siandra is open for breakfast Friday to Sunday, lunch Wednesday to Sunday, and dinner Thursday to Saturday. For those arriving by water, the venue provides access to a private wharf for water taxi or private boat arrivals.
