The bar showcases a rich collection of agave spirits from across Mexico, including tequila, mezcal, sotol, raicilla, and bacanora. Signature cocktails like the "Frida" blend creative ingredients such as sweet potato shrub and cocoa foam, reflecting the same innovation found in the food. Designed by Ben Fretard, the space features bold neon accents and Mexican folk sculptures that evoke the vibrant spirit of Mexico City while retaining a modern edge. Hacienda Melbourne is open seven days a week, with café service from 7 am to 2 pm, lunch from noon to 4 pm, dinner from 5 pm to 10 pm, and a late-night bar until 1 am.
