The restaurant emphasizes simple, authentic global cuisine crafted from the finest local and organic ingredients. Guests can interact with chefs, enhancing the immersive atmosphere. The spacious, naturally lit dining area accommodates 180 guests, featuring banquette seating overlooking Russell Street, two private dining rooms for 14 and 10 guests, and a relaxing lounge area. Operating Monday to Friday from 6:00 am until late, and weekends from 6:30 am until late, Collins Kitchen also offers High Tea on Saturdays and Buffet Lunch on Sundays.
