Nestled in Pyrmont, Umami Dojo offers an authentic Japanese dining experience with a focus on traditional dashi-based ramen. Co-owner and self-taught chef Keiji Mizuno crafts broths using a unique siphoning method, extracting flavors from dried bonito, sardines, mackerel, and kombu. This technique, inspired by Tokyo's Gyorai Ramen, results in a delicate, complex soup. The cozy 16-seat venue features a timber shopfront and traditional Japanese lanterns, creating an atmosphere reminiscent of Tokyo's backstreets. The menu includes sous-vide chicken or pork ramen, handmade gyoza, karaage chicken with ponzu, and desserts like yuzu sherbet and mochi. Reservations are recommended due to limited seating.
