The two-level restaurant features Gothic cathedral-style windows and a blend of restored brick and modern Scandinavian design elements. Helmed by chef Jae Bang, formerly of Norway's Michelin-starred Re-naa, the menu combines traditional Scandinavian techniques with Australian ingredients, highlighting pickling, smoking, and fermenting. Signature dishes include the Freyja waffle topped with Yarra Valley trout roe and smoked sour cream, and beef tartare with salted quandong and tarragon cream. The beverage program emphasizes organic and biodynamic wines, complemented by craft beers and inventive cocktails. Adjacent to the dining area, Valhalla Bar provides a Nordic-inspired setting for pre- or post-dinner drinks. Freyja is open for lunch Tuesday to Friday and dinner Tuesday to Saturday, with reservations recommended.
