Birriwa Homestead FARMING

Located in the fertile Birriwa Valley, Birriwa Homestead FARMING specializes in biodynamic garlic cultivation. Utilizing rich brown alluviums and clay loams, the farm practices crop fertigation to protect against salinity and acidity, introducing nutrients directly to the plants. Certified biodynamic and organic by ACO in 2020, the farm produces black garlic, preserved garlic, new season garlic, bulbils, and plaits/braids. Black garlic, fermented under controlled conditions, offers a honey-sweet flavor with notes of soy sauce and balsamic vinegar, enhancing dishes from risottos to salads.
